In case you hadn’t noticed, it’s cold outside. Really cold. Too cold for me. And it’s not even winter yet.
Yes, I’m whining. So what?
But, when the weather gets cold, my drinks get hot. I LOVE hot drinks. I guzzle hot tea all day long, often switching flavors two or three times.
I enjoy coffee in the mornings, and on my days off, I love having a latte for a treat in the afternoon while I’m running around.
Lattes out can get expensive though, right? And they usually don’t have the fancy pants milk choices I really want (I’m an almond milk kind of gal). So, making them at home is a really obvious solution.
Making a latte at home is actually way easier and way quicker than you think it would be! Do you have one of those old stove top espresso-coffee brewers? No? Then just brew up a smaller portion of very strong brew or espresso. And if you do have one of those old stove top brewers, then just fire it up! By the time the coffee is done brewing, you can have the milk hot, frothy and ready!
After that, just pour your espresso into your cup, put in your yummy flavors (today is vanilla and cinnamon), then pour your milk in! If you don’t have a milk frother or a frother attachment to your hand blender, then just heat the milk and don’t froth it (it tastes just the same, I assure you! It just doesn’t look as pretty).

Oh, and PS? A Cinnamon Vanilla Latte pairs really well with my Cinnamon Spice Candied Nuts…just sayin.
Cinnamon Vanilla Latte (dairy free!)
¼ cup espresso, brewed
1 cup unsweetened almond milk (or milk of choice)
¼-1/2 tsp. Stevia (depending on how sweet you like it)
¼ tsp. pure vanilla extract
¼ tsp. cinnamon
~On the stovetop or in the microwave, gently heat your milk until it is hot but not boiling (in my microwave, I heat it for 1 min).
~Then, using your frother (if you have one, if not, then skip this step), froth the milk until foamy. I use the froth attachment of my KitchenAid Hand Blender (immersion blender), being careful to pour my milk into a deep bowl to froth it in, or else it will fly all over…been there, done that.
~In your coffee cup of choice, combine the brewed espresso, vanilla, stevia, and cinnamon. Carefully four the steamed, frothed milk into the cup. The cinnamon will be pushed to the sides and the top, flavoring the whole latte.
~I love serving mine with a cinnamon stick to stir it with, but that’s just me!

Looks perfect for a gray Seattle day! I really should use my husband’s espresso maker more. Both of use use unsweetened soy milk in our lattes. Do you have a particular brand of stevia that you like? I tried it just once and didn’t like the bitter aftertaste, but I hear that some brands don’t have that problem.

I use the PureVia packets and don’t think they leave an aftertaste (and I also use their granulated larger tub for my baking!) but I’m also very used to the taste, so maybe it’s just me. But I find that they’re usually the least expensive packets on the shelf, so you should give them a try!
