So I had quite the week! Here are a few pictures so you can take it all in! (If you follow me on Instagram…enjoy these again!)
After my workout on Friday, I went and bought wedding stamps and mailed off my Save the Dates!
I’ve still been having my morning oatmeal for breakfast! Sometimes with egg whites stirred in (and spinach too), sometimes as Egg White Oats, and sometimes with protein powder.
I saw the Valentines Day candy and resisted buying…for now!
I made Zucchini Oat Breakfast bread, Apple Banana Bread, and Cookie Butter Chocolate Chip Cookies!
I made an amazing Asian-style chicken spinach salad that Laura would call “strange but good.”
Salad: Spinach, green onions, steamed asparagus, rice vinegar and PB&J chicken (the strange but good part).
For the chicken: first bake or slow cook your chicken with pepper, ginger and Chinese 5 spice. Then, shred your chicken. Warm sugar-free jam (apricot or peach work best here) and drizzle it over your shredded chicken. Mix together PB2 with water (make it thin, so 1/2 Tbs. PB2 + 1/2 Tbs. water) and drizzle that over the chicken. Toss to coat, add it to your salad! Enjoy! Of course, you can use melted peanut butter if you please.
I also received this text from a friend who I didn’t even know read my blog! It’s so flattering that he not only reads it, but he makes recipes from it! He also told me he used my Cinnamon Spice Candied Nuts for his secret Santa gifts for his coworkers! This put the biggest smile on my face!
The Sweaty Breakdown:
Friday: worked with my trainer- arms and upper body! Totally killer and learned that I have very little upper body strength! I was sore for DAYS!
Saturday: 1 hour of cardio (20 min. bike, 20 min. treadmill, 20 min. elliptical)
Sunday: 1 hour of cardio (15 min. bike, 15 min. elliptical, 15 min. treadmill, 15 min. bike)
Monday: 1 hour of cardio (15 min. elliptical, 15 min. bike, 15 min. elliptical, 15 min. treadmill) – I was SO exhausted from lack of sleep that it all caught up to me around the 45 min. mark, so I walked off the last 15 min., did a good stretch, went home to eat dinner, the went to bed early!
Tuesday: Rest!
Wednesday: worked with my trainer – Legs and Abs!
Thursday: Rest!

Oh, dear, I must say that I would be very turned off by strawberry Three Musketeers. 3M are one of my favorite candies, but strawberry…no. the zucchini oat loaf looks delicious, though.

In my head the strawberry 3M would be like a chocolate-covered strawberry marshmallow? That sounds awesome in theory but a lot of seasonal candies get it all wrong and just aren’t worth the risk of trying!
The Zucchini loaf was amazing! With the right sweetness, vanilla, and cinnamon, it tasted like a baked french toast to me! Totally a breakfast must!

Strange but good are the best kinds of salads in my opinion! I love adding weird things especially leftovers just to see how they taste. Congrats on the food buzz!
