It’s not my birthday. Is it yours?
Yes? Wow! I’m so thoughtful!
No? Eh, I figured. But that’s ok! Everyone loves birthday cake!
When I think of birthday cake, although I always had coconut cake at grandma’s house and chocolate cake with mom’s special fudge frosting (to die for) at my parents’ house, the first image that comes to mind is that yummy, sweet yellow cake with rainbow sprinkles!
I love sprinkles! In fact, I think I could put your sprinkle collection to shame. Just sayin.
I put sprinkles on everything. Oats, yogurt, smoothies, ice cream (duh!)…everything is a party!
But I also love cake batter-flavored anything. I think it’s brilliant. And ever since I read Momofuku Milk Bar’s cookbook, I’ve been tempted to make everything taste like cake batter.
Many of you loved my Skinny Funfetti Cake Shake last year, so I’ve made another version of it! This version doesn’t even use cake mix! It’s gluten-free, dairy-free, super low calorie, and sinfully delicious!
The first time I made this shake, I guzzled mine down so quickly that I wondered if someone stole it!
Feel free to add a scoop of protein powder to it if it’s a post-workout treat, but this shake is perfect as is!
Best of all, it solves all of my ice cream AND cake cravings in one frosty glass. Hooray!
Skinny Birthday Cake Shake
(makes 1 amazing shake)
6 cubes frozen unsweetened vanilla almond milk
1 cup unsweetened vanilla almond milk
1 Tbs. granulated Stevia
½ Tbs. coconut flour*
1 ½ tsp. artificial vanilla extract**
¾ tsp. butter extract
1 tsp. rainbow sprinkles
(Note: for tips on freezing almond milk for these shakes, follow directions in this post)
*this is what gives the shake that “cake” texture! If you don’t have coconut flour, try substituting oat flour
**using the artificial vanilla is important here! It’s what gives the shake the authentic “cake mix” taste. Promise!
~Combine all of the ingredients, except for the sprinkles, in your high powered blender and blend until smooth. If it becomes difficult to blend or keeps getting stuck, carefully add 1 Tbs of hot water and continue to blend.
~Top with sprinkles and enjoy!

Haha I know, right? I have to be very specific and demand the artificial vanilla bc that’s the taste of cake!! Save the expensive real vanilla for other things…like oatmeal 😉
