I hope you all had a Happy Easter (or Passover, or weekend, whichever makes you happiest) and you’re not drowning in Peeps and Cadbury Eggs. Though, that wouldn’t be the absolute worst thing to happen…
The Easter bunny didn’t visit me. I don’t know what happened. I was pretty good this year. I think. But, apparently he has higher standards than Stanta. Sheesh.
Well, for a treat for breakfast instead, I can indulge in some Chocolate Chip Cookie Dough, right? Yup, cookie dough. Just straight. Cold. Perfect. Mmm…
Ok, maybe not actual cookie dough (don’t put it past me though), but I made breakfast oats that taste JUST like cookie dough, I seriously did an extremely unnecessary happy dance around the kitchen (spoon in hand) then texted my best friend about my “victory.” Excited? You should be! I was!
This bowl of Cookie Dough Oats taste so much like the real deal, that you’ll probably eat them while trying to reassure everyone around you that they’re actually healthy. That you’re not eating real cookie dough. But you might as well be, because they taste the same.
And seriously, how many times do we have to go over this? Dark chocolate is healthy. Have a pop of antioxidants for breakfast. It’s good for you. But if you’re going to give me a sideways glance (don’t do that! It freaks me out!), then you are more than welcome to use cacao nibs instead! Or both…just a suggestion.
Chocolate Chip Cookie Dough Oats
(makes one decadent bowl of oats)
½ cup old fashioned oats
1 cup water
2 tsp. granulated Stevia
¼ tsp. baking soda
½ tsp. butter extract
1 ½ tsp. vanilla extract
1/3 cup unsweetened almond milk
chocolate chips or cacao nibs (as many as you like!)
~Combine the oats and water in a microwave-safe bowl and cook the oats (In my microwave, it takes about 3 minutes on half-power, but your microwave may be different. Of course, if you stove-top cook your oats, do that instead.).
~Next, stir the Stevia, baking soda, and extracts into the oats (yes, it gets fizzy!). Then, stir in the almond milk.
~Put the oats into the fridge, uncovered, overnight (or at least 4 hours for the milk to absorb and the oats to become very thick).
~When you’re ready to eat your oats, add as many chocolate chips or cacao nibs as you’d like, stir, and enjoy!
Strike up a conversation: Just one question, do you “happy dance” around the kitchen when you have a tasty culinary victory? Wait, two questions (sorry I’m not sorry), are you as excited about cookie dough oats as I am??

I have got to get my hands on butter extract, but I can’t seem to find it anywhere. There are so many recipes I’ve found using it, and this one looks delicious, too!

OK!! I have a couple responses for you!
1. I found mine at Kroger, but I’ve also seen it in Michaels. I know Wilton makes one, but I’ve smelled it and it didn’t smell like butter…so I use the Kroger one.
2. If you can find “vanilla butternut” extract, you can use that too, because it combines vanilla and butter, but it still doesn’t have the same effect as using them separately!
3. Until you do find butter extract, make these oats anyways and add a bit of coconut oil to them 🙂

That’s probably why I made it an overnight oats…because once it’s gone, you have to have incredible patience for that next bowl to be ready! Ha. well…make a few at once, and I won’t tell a soul 🙂

I’ve heard about how putting baking soda in oats can make them taste like cookie dough…you totally beat me to it!! Omg, I would die…or I WILL die…because I’m totally making these! And seriously, I am totally PRO-chocolate for breakfast! I had an English muffin with almond butter the other day that just seemed to be “missing” something…until I added a couple of chocolate chips! A little goes a long way for making me happy! 😀
And for the record, MANY a happy dance has occurred in my kitchen…with jazz hands, jumps, and a few kicks too…although not so many kicks lately 😉 Haha!

OMG I had never heard of putting baking soda in so I’m so glad I just did it!! I was thinking about cookie dough oats for days and days and wanted to get it right, and just thought long and hard about the taste of raw dough, and then baking soda hit my brain!! Woohoo!!

I’ve made something very similar, but didn’t include baking soda. That’s an interesting idea! And I didn’t let mine sit overnight…which is also a great idea since they get even thicker and creamier. Loving this recipe!

This looks SO good! I have heard so much about overnight oats and adding baking soda; I need to jump on the bandwagon! Also, I love the addition of a little chocolate for breakfast!

This is one of my favorite ways to eat oats when I make them! I use the cacao nibs and then swirl in a tbs of pb too 😉
