It was SO beautiful this weekend!
I got to wear shorts and I felt so relaxed, just because the sun was out. My mom and I got to spend the whole weekend together, running errands, planning my wedding, and having fun.
What else is there to do when the sun is out? Well, crack out some summery cookies, of course!
Right?

Macaroons are the perfect cookie for the new OXO egg tools! The separater gives you perfect, easy egg whites, and the hand-crank mixer fluffs up whites in no time!!
Well, I did! I combined my latest obsession, lime, with my favorite classic cookie, coconut macaroons. Macaroons are pretty darn amazing too, because they don’t need any butter or oil, just egg whites…and not a ton of sugar either! They’re fluffy, flavorful…just perfect.
Enjoy the sunshine! And a cookie!
- 3 egg whites
- ¼ tsp. salt
- 2 Tbs. sugar (raw or granulated)
- 2 Tbs. granulated Stevia (or more sugar)
- 2 ½ cups shredded coconut
- ¼ tsp. coconut extract
- 2 tsp. lime zest (zest of one large lime)
- Preheat your oven to 350 degrees F. and line your baking sheet with parchment or a silicone mat.
- Combine the egg whites and salt in a mixing bowl. Whisk until frothy. Add the sugar and Stevia, and whisk for 2 minutes, until it starts to thicken.
- Fold in the coconut, coconut extract, and lime zest. Stir until completely combined.
- Drop 1-1 ½ Tbs. sized mounds onto your cookie sheet (arrange the coconut into a mound with your fingers). Bake the cookies for 18-20 minutes, until golden on the edges and top. Let cool completely on a wire rack before serving. Enjoy!
PS they’re totally gluten-free too… yup, time for a cookie!
(you had had had me at gluten free…)

Oh ya! Pulling my heart strings. And my daughter doesn’t like coconut, so they are ALL for me. Oh wait, that might not be a good thing if I wanna keep the scale down. LOL.
I won’t tell! 😉
I love the flavor combo of coconut and lime.. so refreshing!
yumm, These sound great! Love the tropical flair
Wow these look so yummy and easy to make. Could you use all stevia or does it need the actual sugar too?
You can definitely use all Stevia! 🙂
Yummy! I just made a macaroon recipe yesterday too….but it wasn’t lime! These look delicious! Happy Monday!
Oh I LOVE macaroons, but I have never actually tried to make them! Love the idea of adding lime…it seems so obvious, since coconut and lime are a perfect pair. 🙂
GIRL!! Seriously, the easiest cookie ever!! Get on it! You won’t be sorry 🙂

Hello
It looks nice but it doesn’t look like a french Macaroon…it doesn’t mean i would’nt not taste it 😉
vincent
That’s because it isn’t 🙂 there’s a big difference between a French or Italian Macaron (one “o”) and a coconut macaroon. Two totally different cookies. But you should definitely try these if you’ve never had a macaroon!
Ok..so i don’t know italian one…dont forget to bring some and to let me know when you come to france
maybe if i invite you that’s gonna happened quicker 😉
