Wanna make your mamma proud?
Make her breakfast.
Wanna make her really really proud?
Make her a pink breakfast.
Totally does the trick.
I know what you’re thinking. “Oh Melissa. Now I have to figure out a way to make her breakfast pink and appetizing?!”
Sheesh people, stop worrying! I totally have this covered! These pancakes are pink, healthy (yes!), and super flavorful! Seriously! Let’s go ahead and run the gamut, mmmkay? Vegan, gluten-free, full of fiber and vitamins…gosh you must really love your mom!
Strawberry Banana Oatcakes
(makes one portion, 4 Oatcakes)
¼ cup strawberries, hulled
½ large, over-ripe banana
1/3 cup oat flour*
¾ tsp baking powder
¼ tsp. xanthan gum
2 tsp. granulated Stevia
*I grind my own! I pulse old fashioned oats in my mini food processor until extra fine.
~Using a blender or immersion blender, blend the strawberries and bananas until smooth (it will result in approximately 1/2 cup of blended fruit).
~Add the oat flour, baking powder, xanthan gum and Stevia to the blended fruit. Mix together until completely mixed.
~Heat your skillet, sprayed with nonstick spray, over medium heat. Scoop the batter (a little under ¼ cup) onto the skillet and cook the oatcakes 3-4 minutes on each side (until golden in color).
~Serve and enjoy! These would be lovely drizzled with honey and yogurt, but if you want to keep them vegan, maple syrup or agave would be great too.
Picking up some strawberries this weekend and totally making these for myself!
Great idea! Enjoy!!
such pretty pictures!!
Thank you Linz!! My pictures are my pride and joy 🙂
I have been wondering about your oatcakes. I LOVE that you use pureed fruit instead of eggs. AMAZING. SO creative.
One of my favorite fruit combinations is bananas and strawberries, so I’m loving the looks of these pancakes. So simple too!!
Your pics are drool worthy!
Yum these look delicious!
Need! 🙂
PINNNNNNK! Do they come with a Barbie?!? Wait…oh yeah, it’s Mother’s Day NOT my birthday. Damn! Well, keep the Barbie in mind for this coming December…you have 7 months to think of something! 😉
Oh and if you REALLY want to impress your mom, you’ll take a cue from my sister and spell out the love in pancakes…http://www.kissmybroccoliblog.com/2011/05/09/kiss-my-mama/
Seriously, I could kill her for one upping me like that! Lol
These look fantastic. I always grind my own oat flour too (and quinoa flour).
