So. You know that moment when you’re scarfing down Puppy Chow…Muddy Buddies…ya know…by the handful and you’re thinking “gosh…what else can we turn into Muddy Buddies? Wouldn’t these be better if they were bigger?”
Yeah, done. You’re welcome.
You will absolutely DIE when you taste these! Seriously, the best thing ever.
Wait, scratch that. The BEST thing ever is when you put them in the freezer (just do it) and then eat them cold! Yes!
Then…it snowballs and you’re crumbling frozen Muddy Buddy Ritz on top of your ice cream. But doesn’t crumbling defeat the purpose of having bigger Muddy Buddies? Then make Muddy Buddy Ritz ice cream sandwiches.
Side note: I don’t watch soap operas, but have you noticed that every time they come on, they start with a couple in bed together? And by couple, I mean somebody’s husband with someone else’s girlfriend…
Yeah. Anyways. You’ll flip for these. They’re the best. Trust me.
- 20 Ritz crackers
- 1/4 cup bittersweet chocolate chips (60% - or your favorite chocolate chips)
- 1/4 cup creamy peanut butter (I used Jif natural)
- 1 cup powdered sugar
- In a microwave-safe bowl, combine the chocolate chips and the peanut butter. Heat until completely melted (I microwaved mine on 50% power for 60 seconds, stirred, then heated for 30 seconds until completely melted). Stir well.
- Create an assembly line: Ritz crackers (unwrapped), the bowl of melted chocolate and peanut butter, a wide bowl with powdered sugar (for dredging), then a piece of parchment (to set finished Muddy Buddy Ritz on).
- Use one hand to dip your Ritz cracker in the chocolate peanut butter. Completely coat the chocolate, then carefully lift it out of the chocolate, and set it into the bowl of powdered sugar. Use your other hand to sprinkle the powdered sugar on top of the chocolate-coated Ritz until it looks completely covered. Use that same hand to carefully transfer the finished cracker to the parchment to set.*
- Once the Muddy Buddy Ritz are set (approximately 30 minutes), give them another toss in the powdered sugar.
- Place in a well-sealed container until you're ready to eat them (don't forget to put some in the freezer to try them chilled! You'll love it!). Enjoy!
- *Although it may seem like all of the chocolate will drip off the Ritz, once you place it in the powdered sugar and carefully scoop powdered sugar over the cracker, the chocolate-peanut butter won't be going anywhere! Coat the cracker, then set it aside to set.

Oh how I love your little ADHD mind…totally cracking up over the soap opera comment! I remember when i was little, counting down the (what seemed like) years till my mom’s “stories” were over so I could watch Power Rangers! Ha!
And Muddy Buddy ice cream sandwiches? *swoon* I could easily put away an entire sleeve of Ritz without even realizing it…dangerous little devils! And you just made them 10 times more deadly! Death by chocolate AND peanut butter? Whatta way to go!
