Ok, so it may not seem like “coconut lime season,” but trust me, it is.
This is a drink. Not a smoothie.
A green drink. That doesn’t taste like grass. Promise.
Lime. Coconut. Banana. I’ve been hooked on this combo. I’ve been drinking this drink, like, twice a day. That’s a big commitment.
I think it’s important to have that go-to special drink that keeps you hydrated and healthy, especially since flu season (knock knock…oh crap, where’s the wood…) is creeping upon us.
I find myself running around like crazy lately, and knowing that I have my special green drink in my cup holder (note to self: clean gum wrappers out of cup holder soon…) gives me peace of mind. The spinach is undetectable, the coconut water rehydrates me, the banana makes it smooth and gives it a bit more body and the lime amps up the flavor while masking the odd taste that coconut water can have (sorry kids, I’m not chugging straight coconut water; can’t do it).
The great thing about drinks is that you can make them your own. I love mine semi-sweet with just a touch of Stevia, but you can make yours more or less sweet by adjusting the Stevia, using honey, or omitting it all together.
Bottoms up! And wash your hands. A lot. Please, don’t get sick this season.
- 1/3 cup coconut water (unsweetened, plain)
- 1/3 cup unsweetened vanilla almond milk
- 1 cup spinach leaves
- 1/4 cup Italian flat-leaf parsley
- 1/2 tsp. flax seeds
- juice from 1/2 a lime
- 1/2 medium banana, frozen
- 1/2 tsp. granulated Stevia*
- ~In a blender, combine all of the ingredients. Blend until smooth.
- ~Add 1 cup of water and 4 ice cubes and blend again until smooth. The ice blended into the drink will thicken it slightly but primarily serves to keep it super cold.
- ~Fill a glass with ice cubes and pour your drink over the ice. Garnish with flax seeds and unsweetened coconut flakes, if you please. Enjoy!
- *Sweeten this drink to your liking. Use more or less Stevia or substitute honey.

You said wood…teehee! And seriously…I can’t even tell you how many Chimes wrappers I have to clean out of my car door every week! When I was a full on ginger junkie, I even found them in my bed…and I never ate one in bed! …at least not that I know of… o.O
