Decadent and fancy ice cream couldn’t get any easier with my No Churn Quince Walnut Ice Cream. Coconut milk is sweetened with condensed milk, made rich and creamy with cream cheese and flavored with Quince fruit paste and toasted walnuts.
I’m a failure. I know I was supposed to make you something green and spiked with mint, Guiness, coffee, Irish Whiskey, Baileys, potatoes, leprechauns and luck…
Well, I didn’t. And I’m pretty sure you’ll just drink your coffee, eat some Lucky Charms and grab a green pen to keep in your pocket “just in case” as you run out the door. So, I don’t feel so bad. Maybe if I knew more about Irish culture, maybe if I’d ever had Irish Soda Bread or corned beef, I’d be flipping my lid over this one. But I haven’t and I don’t so I’m sorry but I’m not.
Sure, I’ll give you a kiss if your Irish and you have a fetching red beard, but I don’t particularly enjoy being pinched…so…
I made you no-churn ice cream instead!
Quince Walnut Ice Cream…No Churn!
I had never tried Quince fruit before, but for good reason. First of all, they’re like $3-$4 each. And you have to fully cook and peel each one before even tasting it. And so…I’ve never messed with them. But when Trader Joe’s has Quince Paste for cheap cheap cheap and its as easy as opening the container…yeah I’m ready for some Quince now!
It’s a really lovely, unique fruit too. Quite light in flavor and yet fresh and bright. It tastes really amazing with cheese-like flavors; which is why its sold as a paste, ready to be served with cheese and crackers on cheese platters. Which means its also going to be killer in an ice cream tasting faintly of cheesecake and paired with walnuts.
Total no brainer. Also a no brainer: no churn.
Yeah, I have an ice cream maker, but no I don’t always have the patience or the room in my freezer for the bucket. So when I figured out who to just throw ingredients in my blender or under my hand mixer, freeze it and then it’s ready to scoop…done.
So here’s some fancy pants ice cream for you. Just make sure to get your ingredients really cold before using them. Refrigerate your coconut milk and your sweetened condensed milk. Use light or full-fat coconut milk, just make sure it’s the canned, thick kind. If you use full-fat it’ll be richer and fuller bodied, if you use the “light” then it’ll be a little icier in texture, but still just as tasty.
Garnish with figs, fresh or dried, and toasted walnuts.
- 15 ounce can coconut milk, refrigerated overnight
- 1/2 cup sweetened condensed milk, refrigerated
- 3 Tbs. cream cheese
- 1/4 cup Quince fruit paste (I used Trader Joe's brand)
- 1/2-3/4 cup toasted, chopped walnuts
- garnish: dried or fresh figs
- In your blender or in a bowl with a mixer (I used my Vitamix) blend the cold coconut milk until it begins to thicken (3-5 minutes with a mixer). Next, stream in the sweetened condensed milk until completely incorporated. Next, add the cream cheese and Quince fruit paste and blend for 1 more minute, until smooth and completely mixed. Turn off your blender/mixer.
- Fold in the toasted walnuts. Pour the mixture into paper pints (or into a plastic wrap-lined loaf pan). Apply lids (or wrap completely with several layers of plastic wrap). Freeze until solid.
- Let the ice cream sit out to soften for 10-30 minutes before scooping and serving. Serve with figs and more toasted walnuts. Enjoy!

I’ve never heard of quince fruit paste! Or quince fruit in general. But I love that it can be used to sweeten this ice cream. I wonder if date paste would work too?

I’m sure date paste would work! But its definitely not the same flavor. I’ve seen Quince fruit paste at Whole Foods too in the cheeses section

I’ve had Irish soda bread…it tastes like regular bread. I’ve had corned beef…it tastes like SPAM. Believe me, you’re not missing a THING! I’ve also eaten quince without peeling OR cooking it. Yeah, kinda like eating an under ripe guava. Note to self: peel AND cook in the future! I’ve had quince paste before too…at a restaurant in ATL with Laura…but I don’t really remember it tasting like much…bummer! This ice cream on the other hand looks like it tastes beyond amazing…and with figs and walnuts on top? Ohmygerrrrd!
