My Chocolate Peppermint Pudding Cups are a super easy, nutritious way to enjoy the holiday’s best flavor combo: peppermint and chocolate! Pudding cups aren’t just for kids!
I’m officially drowning in the best possible way in peppermint everything. From the peppermint ice cream at our local scoop shop to the three different kinds of candy canes I bought at Target yesterday. Not to mention the Andes version of peppermint candies I can’t stop using on top of and in everything. Hashtag tistheseason.
So we’re just going to ride the peppermint train right through December. Starting with those donuts I made last week to these Chocolate Peppermint Chia Pudding Cups!
They’re like the uber healthy version of snack packs. For the holidays. And for breakfast. Or anytime.
Pudding for breakfast? High five.
This chia pudding is uber simple. You basically stir it together and you’re done. Then you blend it until smooth and gobble it down.
I started blending my chia puddings after I realized that my husband would never ever eat chia pudding in its wild form. I don’t mind it, but the seediness of it freaks him out and doesn’t convince him it’s worth eating. But blended? Smooth and classic pudding texture. Makes a total difference.
So, let’s get to it, shall we?
- 1 cup unsweetened almond milk
- ¼ cup chia seeds
- ¼ cup cocoa powder
- 1 ½ Tbs. granulated Stevia (or sugar)
- ½ tsp. vanilla paste
- ¼ tsp. peppermint extract
- In a bowl, combine the almond milk and chia seeds. Cover with plastic wrap and refrigerate for 1 hour.
- Stir in the rest of the ingredients, recover, and let set in the fridge for 1 more hour.
- Scoop the pudding into your blender and blend until smooth. Adjust the sweetness to taste (if you like sweeter, add ½ Tbs. more of Stevia).
- Scoop the pudding into two cups, top with whipped cream (if you so desire), share and enjoy!
- Keep finished pudding cups in fridge, covered, for up to 5 days.
