My Carrot Cake Oatmeal is the perfect way to start the day for all of you carrot cake lovers! Packed with protein, fiber, fruits and veggies, this breakfast is everything you need in one bowl.
Ok, I’m carrying off my Banana Bread High Protein Oatmeal recipe with this one. This is another of my favorite oatmeal recipes because it reminds me of carrot cake, is full of hidden veg and fruits, and is a tremendously healthy way to start the day.
I know that eating healthy is important year round, but because you may just be “starting anew” at the New Year, I know this is the perfect time to bombard you with healthy breakfasts. Good? Good! If you dive into my archives, I have a ton of dessert flavored oatmeals, which I know is the most fun way to start the day!
This Carrot Cake Oatmeal uses egg whites, which I absolutely love and encourage you to try. They add low calorie protein to your oatmeal without changing the taste. They make your oats fluffy and silky! And you need the protein for all of that working out your doing to achieve your New Year’s resolutions…or just because you’re a functioning human and protein is essential to helping you focus and keeping your muscles lean and mean. Pow pow.
Carrot Cake Oatmeal is absolutely delicious and filling. You can enjoy it with a morning cup of coffee or a glass of fresh juice. It is so satisfying.
- ½ cup old fashioned oats (gluten free)
- 1 cup water
- ½ cup unsweetened almond milk
- 1 large carrot, shredded
- 2 egg whites
- 3 Tbs. golden raisins
- 1 Tbs. flaxseeds
- 1 Tbs. hemp hearts
- 2 tsp. coconut oil
- ½ tsp. cinnamon
- ¼ tsp. allspice
- 2 tsp. coconut sugar or ½ tsp. granulated Stevia (optional)
- walnuts (raw or toasted)
- In a pot over medium low heat combine the oats, water, almond milk and shredded carrot. Stir, bringing the heat up and the oats to a boil, then immediately turn back down to a simmer. As the mixture becomes very thick and the liquid is almost all the way absorbed, add the egg whites and stir vigorously for an additional minute. Turn off the heat and stir in the raisins, flaxseeds and hemp hearts, coconut oil, spices, and sweetener of your choice. Add as many walnuts as you desire (I grab a small handful of whole walnuts, crush them in my hand, and add them).
- Pour into a bowl, eat, enjoy!
- I add extra toppings to mine, including sliced banana for added natural sweetness.
