I am obsessed with pens and stationary. For as long as I can remember, show me a smooth writing pen I’d lose sleep until I owned it. It’s bad.
I love notebooks, pens, pencils, cards, journals, handwriting styles…
My first job was in a custom card shop for goodness sake. I was 14 and making handmade wedding invitations for brides and taking home pearlescent paper scraps to use as bookmarks.
Where I’m going with this is: I ordered a notebook and I’m seriously so excited about it. It’s kind of ridiculous. I had been telling myself for months that ordering a Midori Traveler’s Notebook is just not something I need to do…but due to my raccoon-like fixation sickness, I just couldn’t drop it.
So, I ordered it. I feel SO much better. And yes, I felt a need to confess it to you.
Moving on. I seem to also have an obsession with oatmeal, but you already knew that. My Apple Pie Oatmeal is one that I’ve been making a variation of almost every morning for the last few weeks.
I love cooking chopped apple and flaxseed right into the oats, making the oats rich with flavor. I then fold in delicious cinnamon, vanilla and pure maple syrup, making this bowl truly irresistible.
A piping hot bowl of Apple Pie Oatmeal can be in front of your face, ready to eat in a matter of minutes. It’ll satisfy your cravings for pie and get you started on the right foot!
Now, please tell me I’m not the only one with an unhealthy obsession with something trivial, like pens.
- ½ cup old fashioned oats (gluten free)
- 1 cup water
- 1 Tbs. flaxseed meal
- 1 Tbs. raw pumpkin seeds
- ½ apple (I like honeycrisp or fuji)
- 1 Tbs. maple syrup
- ½ tsp. vanilla extract
- ½ tsp. cinnamon
- optional topping: more apple, pumpkin seeds, and syrup
- Cut your apple into small chunks. I like to reserve some to put on top of my oats too, but that isn’t necessary.
- In a microwave safe bowl (or in a pot on the stovetop), combine the oats, water, flaxseed meal, pumpkin seeds and apple chunks. Cook on half power for 4 minutes, or until the water is absorbed and your oats are fully cooked (every microwave is different, so just watch yours carefully and stir it a few times if you need to. On the stovetop, whisk the ingredients together over medium heat until fully cooked). Stir in your maple syrup, vanilla extract and cinnamon.
- Pour your oatmeal into a bowl and enjoy! I like to top mine with more pumpkin seeds, apple and a touch more syrup!
