My Flourless Whiskey Chocolate Cake is the only way I want to be celebrating St. Patrick’s Day this year: with a rich, delicious chocolate cake.
St. Patrick’s Day always seems to sneak up on me.
I’m not particularly great at celebrating this holiday…frankly it usually passes by and I only realize it when the news reports do a recap of the local crazies. I’m not a big drinker, I’m not Irish, the only leprechaun I see is on the box of a mallow-ridden cereal I love, I always have green on because my eyes are green and I have never had soda bread…
BUT I think I could get behind St. Patrick’s Day with this Flourless Whiskey Chocolate Cake! I based it on my Flourless Chocolate Snack Cake, and holy moly it is damn good!
This cake is fudgy and rich and has a faint taste of whiskey, a big taste of chocolate. Using applesauce in the recipe not only cuts the fat, but it also enhances the taste of the whiskey, because I always associate the taste of whiskey with apples (am I wrong here?).
I brought this cake with me to Chicago to visit my parents (and ironically did not attend the St. Patrick’s Day festivities in the city) and we were practically double-fisting it, topped with vanilla ice cream.
If you only make one thing to celebrate this week, and then for weeks and weeks afterwards, make it this cake! Who needs green beer when you have Flourless Whiskey Chocolate Cake?
If you’re gluten free, please read the note on whiskey I’ve included with the recipe.
- ¾ cup almond meal
- ¼ cup cocoa powder (unsweetened)
- 7 ounces semisweet chocolate
- ¼ cup brewed cooled coffee
- ¼ cup unsweetened applesauce
- ¼ cup coconut oil
- 3 Tbs. whiskey*
- ½ tsp. Kosher salt
- ¾ cup coconut sugar
- 4 eggs, separated
- ¼ tsp. cream of tartar
- Optional: powdered sugar, more chocolate for drizzling
- Preheat your oven to 325 degrees F. Spray a 9” springform pan with nonstick spray or coat with coconut oil and then use cocoa powder to coat the bottom (add a couple Tablespoons into the pan and tap it around until the bottom is coated, then tap the extra out into the sink).
- In a microwave safe bowl, combine the 7 ounces of chocolate and the coffee. Microwave on half-power until melted and smooth (or you can do this in a double-boiler). Stir in the applesauce, coconut oil, whiskey and coconut sugar.
- In another bowl, combine the almond meal, cocoa and salt.
- In a large glass bowl (make sure it is completely clean and dry), combine the egg whites and cream of tartar. Use a hand mixer (or your stand mixer) to beat into stiff peaks.
- Now, to the melted chocolate mixture (which is now cooled), whisk in the egg yolks.
- To the stiff egg whites, add ½ of the almond meal mixture and half of the melted chocolate mixture; fold until almost completely incorporated. Add the rest of both of the almond meal mixture and the chocolate mixture and continue folding until completely mixed in.
- Pour the batter into your prepared pan. Bake for 50 minutes, until a toothpick comes out clean.
- Let the cake cool on a wire rack. Remove the spring form ring. Sprinkle the top with powdered sugar. Melt the extra chocolate (around ¼ cup) and put it in a zip-top bag; snip the bottom corner and drizzle the chocolate on the top of the cake. Cut, serve, enjoy!
- You can keep the finished cake in the fridge for 5 days or in the freezer until you’re ready to eat it.
- *You can google the gluten free whiskey list. Quality whiskey is made without wheat. A lot of people with gluten intolerance don’t have a problem with whiskey because any glutens are nulled in the distilling process. If you are unsure, just omit it. I used Evan Williams Kentucky Bourbon.
