My Spring Fruit Salad Chia Pudding is an iconic “fruit salad” on top of a creamy dreamy chia pudding! This snack is so easy to throw together and is naturally gluten free.
I’ve named this a Spring Fruit Salad Chia Pudding, because I was pretty sure that “ambrosia” salad would make you run and hide. A lot of recipes from the 1950’s will do that to ya. Plus, I left out the marshmallows…so it isn’t legit ambrosia.
BUT doesn’t looking at this fruit salad just make you think of Easter and springtime?! It totally does it for me!
This time of year is kind of tricky when it comes to seasonal eating. There aren’t a lot of stellar fruits that are abundant at the grocery store, so I’m pretty sure that’s why Easter fruit salads usually look like this. It just looks so iconic and reminds you of childhood though so I really don’t mind it.
And, to make it a complete meal snack, I’ve piled it high on a chia pudding! My chia pudding is a bit different this time around because I’ve boosted the protein (and the filling-factor) by stirring in Greek yogurt after it has thickened up. I love how creamy and smooth it makes the pudding.
I’m hoping that even as our little one grows up, healthier recipes like this one are ones that pop into his mind around this time of year, and not just the baskets loaded with candy.
- 2 Tbs. chia seeds
- ½ cup unsweetened almond milk
- ½ tsp. vanilla extract
- 1 tsp. honey
- 2 Tbs. plain Greek yogurt
- topping: pineapple chunks, mandarin oranges, unsweetened coconut*
- In a bowl or jar, combine the chia seeds, milk, vanilla and honey. Set in the fridge to set up for 4 hours or overnight.
- Stir the Greek yogurt into the set chia pudding (the pudding will be slightly runny still, but the Greek yogurt will thicken it up). Top it with fruit and coconut. Enjoy!
- *I use canned fruit that is packaged in water or pure juice, not syrup! I use a couple Tablespoons of each.

I love chia pudding and eat it for dessert often. I love the addition of the fruit salad to this pudding. Perfect for afternoon snacking too!

I LOVE doing it, it’s one of my favorite snacks. You can always add more fruits and make it in “layers”: one with chia pudding, other layer with fruits. Try different fruits, mix them! It’s great
