This will probably sound familiar to you:
It’s getting close to your dinnertime. You’re hungry and you either have a plan for the meal or no plan at all. But either way, you’re hungry now.
You pull out the ingredients you need for dinner, and a bowl for yourself and load it up with a snack to eat while making dinner. And a glass of wine too, I’m betting.
It’s an Unofficial Meal.
We have an Unofficial Meal almost every night. And usually it’s themed with what I’m planning for dinner…not out of making another complicated plan for a meal, but because I try to just use some of the ingredients that are already out for making dinner. And if it’s not a bowl of olives or nuts, it is always a dip.
My husband gets to eat while unwinding from his day at work; I get to satiate the hunger that is building as I make dinner. It’s our little routine.
I love pulling out a container of hummus for our little Unofficial Meal. Paired with some Garlic Spiced Tortilla Chips I quickly baked up and probably some veggie sticks I’ve cut, it’s our favorite. And I can’t leave well enough alone, so I love to make a bit of an extra topper for my hummus!
This Cilantro Lime Fresh Salsa Hummus Topper is incredibly fresh, vibrant, and quick to throw together. It is a great way to kick off taco night in my house! And for me, it is perfect on top of the Chipotle Hummus from Sabra because the bright lime and cilantro flavors marry seamlessly with smoky chipotle. The layers of spice are unbeatable.
If you’re not a spicy lover but still love a bit of a pre-dinner fiesta, the Classic “plain” flavor is amazing with the Cilantro Lime Fresh Salsa too!
I love that adding Cilantro Lime Fresh Salsa to the already delicious Sabra hummus makes it my own. My husband and I can polish off ½ a container just before dinner, easily!
You’ll love adding my Cilantro Lime Fresh Salsa Hummus Topper and my baked Garlic Spiced Tortilla Chips into your nightly pre-dinner routine. Getting social and dippy with a cocktail or fizzy water is such a fun way to socialize and unwind with those you love before getting into the big meal.
- ¼ cup diced tomato*
- 3 Tbs. diced white onion
- 1 tsp. finely minced jalapeno
- 3 Tbs. chopped cilantro
- pinch of Kosher salt
- ¼ of a lime
- 1 container of Chipotle Sabra Hummus or Original Sabra Hummus
- In a small bowl, combine all of the ingredients. Taste and add salt to your liking.
- If you’re using the Sabra Chipotle Hummus, stir it together so the topping is mixed in. Then, add a few spoonfuls of your Cilantro Lime Fresh Salsa to the top of the hummus! Dip, eat, enjoy!
- *I used a Roma tomato, but any variety is fine. Discard the seedy interior.
- You can keep extra salsa in an airtight container in the fridge. OR just stir even more of it into your hummus!
- 5 corn tortillas
- olive oil spray
- ½ tsp. Kosher salt
- ½ tsp. garlic powder
- ½ tsp. paprika
- Preheat your oven to 375 degrees F. Line a baking sheet with parchment paper and spray with olive oil spray.
- Cut each tortilla into 6 equal triangles. Place each triangle on your baking sheet (I place mine really close together but never overlapping). Lightly spray the tops with the olive oil spray. Sprinkle on the spices and salt.
- Bake for 12-14 minutes, watching them closely so they don’t burn.
- Let the pan cool on a wire rack, then move the chips into your bowl. Dip, enjoy!
- Keep extras in an airtight container on the counter for a few days.
