My Honey Drizzled Roasted Carrots with Hummus are my go-to quick appetizer or side dish after a morning trip to the farmers market. Garden-fresh carrots are roasted up with spices and paired with Pine Nut Hummus and local honey. It’s the perfect seasonal dish!
So my husband has this look of panic slash glare whenever he hears my phone hit the ground. And it happens A LOT.
I have a way of laughing it off, practically wishing nothing has happened to the phone by pretending it hasn’t. It’s worked for me so far. I usually drop the phone, laugh and brush it off and throw it into my pocket and peek at the screen later just to double-check that I didn’t break it.
Well, I was woken up at the crack of morning by baby boy flipping around in his crib, trying to get my attention (I swear he knows I have a camera on him). My husband grabbed the monitor to look then dropped it…on my phone screen.
Why is Siri talking to me? Why is Siri asking what he can do for me (my Siri is an Australian man…of course)?
Well, peek at that screen and it is shattered.
Imagine that.
See? Dropping it isn’t the problem. It’s dropping other things ON it. And totally not my fault!
Well anyhoo. I’m staring at a shiny new screen after a day of tagging in and out of the Apple Store. Now I just need to stop messing around and get one of those hard-core cases.

Honey Drizzled Roasted Carrots with Hummus are the answer.
Let me assure you, these are not mushy cooked carrots. That’s just nasty.
These carrots are scrubbed and quickly peeled, drizzled in olive oil and sprinkled with spices, then roasted to perfection. They have a slightly tender exterior and a firm interior that gives them a perfect bite.
After I pull them from the oven, I let them cool a touch, then keep things SO easy. I dollop a generous portion of pine nut hummus (I used Sabra) right onto the pan, place the carrots on top of the hummus and drizzle it all in honey.
Keeping it all on the pan that the carrots were roasted on keeps the roasted spices and oil in play, not throwing away any of the flavor. I love doing this for an easy side dish for dinner or an appetizer. Keeping a bit of the carrot tops on them give them a bit of a handle so you can just grab and dip, chat and relax.
- 6-8 medium sized garden-fresh carrots
- 1 Tbs. olive oil
- ½ tsp. paprika
- ½ tsp. cumin
- ½ tsp. sea salt, plus more for finishing
- 1 Tbs. local honey
- Pine Nut Hummus (I used Sabra)
- Preheat your oven to 375 degrees F.
- Scrub your carrots, peel them and chop the green heads down, leaving around 1” of green. Place them on your baking sheet.
- Drizzle the carrots with the oil. Sprinkle on the paprika, cumin, and sea salt. Roast the carrots for 20 minutes. The carrots will appear slightly blistered.
- Let the carrots cool on the pan for a few minutes until the pan isn’t hot. Move the carrots to the side. Dollop on the pan a hefty portion of the hummus (I place around ¾ cup of hummus on the pan). Place the carrots on top of the hummus. Drizzle the carrots with the honey and sprinkle on a touch more sea salt.
- Serve right off of the pan. Enjoy!

I have some similar phone stories. On my 30th birthday my 2 year old dropped it in the toilet. I woke up to discover that. Happy birthday, huh? Then days after I got a new phone a few years ago one of my kids was emptying the dishwasher and dropped a ceramic plate on the screen. Bye bye phone. and I don’t think I had the insurance plan. (Trust me, I do now.) Lovely roasted carrots dish! Mmmmmm…..and great use of hummus.

OMG Girl. Literally as I’m reading your comment I have been shopping for a life proof case! Haha. And I totally have the insurance yet it didn’t cover my screen because that is “physical damage”…um, so what was the point of me paying for extra insurance??
