It’s NATIONAL HUMMUS DAY!! Opa!!!
It also happens to be a Friday the 13th, but I happen to have great luck on Friday the 13th so no worries.
Anyways. National Hummus Day! You know I love hummus, so of course I had to celebrate.
I mean, I put hummus in just about everything. Did you know there’s hummus in these Blondies? Yup. They’re fabulous. You’re welcome.
One of the main reasons I love hummus so much is because it is so easy and adds a dose of protein to your dish. I don’t often have the patience or time to cook up some chicken, but a dollop of hummus on my salad and I’m good to go.
So I have a SUPER simple recipe, or more of a procedure, for an appetizer or Unofficial Meal! It’s a great way to squeeze in a salad without knowing you’re eating a salad. Or in other words, my husband is eating a salad that’s not slathered in creamy dressing, and your kids could be having fun with all of these colorful veggies and not even know it!
My Hummus and Veggie Lettuce Wraps happen to be my latest obsession. I’ll turn just about everything into a lettuce wrap. I love loading up lettuce cups with piles of colorful julienned veggies and herbs and binding it all together with creamy hummus.
Putting together a big platter to graze on lettuce wraps is very simple and makes for a more relaxing dinner for me. I’m not starving to death while trying to hurriedly put together dinner so we can eat (which more than often now gets delayed because I have to walk away with the baby to put him to bed). Having a casual Unofficial Meal ready to go for my husband and I gives us something healthy to snack on, chat over, and takes the pressure off for the evening.
You can use whatever flavor of Sabra hummus you like, but I love using the Lemon Twist or the Tuscan Herb best because they have all of the flavors I normally put in a homemade salad dressing! Perfect. You can grab a coupon for whichever tub you want HERE.
So, get the procedure to throw together this Hummus and Veggie Lettuce Wrap platter below and enjoy your Unofficial Meal!
- Butter Lettuce (also called “Living Lettuce”)
- Large Carrots
- Cucumber
- Baby Bell Peppers.
- Fresh Basil
- Fresh Cilantro
- Sabra Hummus: Lemon Twist or Tuscan Herb are great choices!
- Kosher salt
- Wash and dry your butter lettuce leaves. I like to have 3-4 lettuce cup leaves ready per person. Wash your cilantro and basil also and set aside.
- Scrub your carrots and cucumber. I like to use 2 large carrots and 1 large cucumber for 2-3 large portions. Use a julienne peeler to peel the carrots and cucumber into long, thin strips.
- Wash 4 baby bell peppers for 2-3 portions. Slice them into thin rings and discard stems.
- Pile the lettuce cups, fresh herbs and cut veggies onto a platter. Open a tub of Sabra hummus and have a serving spoon ready.
- Make your lettuce cups: smear 1 Tbs of hummus into the bottom of your lettuce cup. Pile on some carrots, cucumber and bell peppers. Add a leaf or two of basil and a few cilantro leaves (I like to just put a whole stem in mine). Eat, enjoy!
- This is my favorite way to eat and serve “salads” as appetizers or Unofficial Meals before dinnertime! This is also a great way to get kiddos and picky eaters to enjoy a salad without even knowing they’re eating a salad!
