My Spiralized Spring Roll Salad with Peanut Lime Dressing is the perfect summertime lunch, made entirely with a KitchenAid Stand Mixer! And as a special treat, I have an amazing giveaway too!

But here we go!
I am obsessed with Vietnamese flavors, though I haven’t found a restaurant near me that I love yet. I love the fresh herbs that they pile into dishes after they’re cooked, like cilantro, basil and mint. And I love that everything I try never seems to be a heavy dish.
So, I was pretty darn psyched when KitchenAid sent me the spiralzer attachment to their beautiful mixers. The spiralizer takes veggies and grates them in a spiral manner, churning out veggie “noodles”! So fun, right?
The first thing that popped into my head was a big veggie salad with all of those fresh herbs that I love and a peanut lime dressing! Done!
I know that spring rolls are typically stuffed full of cellophane noodles, but because my salad is in “noodle” form, I kept it strictly to the veggies. I think you’ll agree, but I found that having a brand new way to eat veggies makes it so much easier and more fun to eat a salad. The crisp, bright, clean veggie flavors are only highlighted by the deliciously creamy peanut lime dressing I whipped up in the mixing bowl.
Although many peanut dressings tend to be quite thick and heavy, this one isn’t. It is full of bright lime flavor and when mixed with salty chopped peanuts, it gives the perfect body to this salad! After you dress your salad and take a bite, you’ll get bursts of basil and cilantro, crispy cucumber and creamy peanut butter with summery lime! It’s perfection.
For protein, I added cold shrimp. When you look at a Vietnamese spring roll, you’ll usually see shrimp, so that’s why I have tossed them into this salad. If you’re not a shrimp fan, though, a piece of seared salmon would be so lovely.
OH WAIT! So did you know you could make an entire salad with your KitchenAid mixer?! Yes! Even more of a reason to use it everyday…but maybe you NEED a KitchenAid mixer too?
Yup. So I’m sharing a delicious Spiralized Spring Roll Salad with Peanut Lime Dressing AND a GIVEAWAY for a KitchenAid Artisan mixer and the Spiralizer attachment set! Hooray! Just use the Rafflecopter below to enter (if it is slow to load, I apologize, but please be patient).
Here’s the recipe (seriously, you’ll love it) and then you can jump down to the giveaway too!
- 1 large zucchini (or 2 small-medium)
- ½ large cucumber
- 3 radishes
- ½ cup fresh cilantro (a large handful)
- 3-5 large basil leaves
- 6 ounces medium shrimp, cooked, cold*
- 3 Tbs. chopped peanuts
- ¼ cup creamy natural peanut butter
- juice of ½ a lime
- 1 garlic clove, minced
- 1 tsp. coconut sugar
- 3 Tbs water
- pinch of Kosher salt
- Hook the Spiralizer attachment to your KitchenAid mixer. Insert the small spiralzed blade (I chose not the finest grade, but one size up) and place a bowl under the attachment to catch your veggies. Scrub and prepare your zucchini by cutting off the ends and then cutting the zucchini in half. Spiralize the zucchini halves.
- Next, switch to the cucumber blade (which results in a paper thin but wide spiral, perfect for cucumbers) and spralize the cucumber half.
- Now, thinly slice the radish (I used a mandolin) and add the herbs into the bowl, tearing them up a bit with your fingers. Toss in the shrimp.
- Make the dressing: In the bowl of your mixer with the whisk attachment, add all of the dressing ingredients except for the water. Whisk on low speed until well combined. Slowly drizzle in the water as it is whisking until you reach a thin consistency you like (I like mine a touch thicker, so I stopped after 2 Tbs.).
- Add the dressing into your salad. Sprinkle with peanuts and toss all together. Serve and enjoy! You can use a knife to cut up the spiralized veggies a bit if you want to or leave them in “noodle” form.
- *I quickly boiled my shrimp until pink and then dunked them in ice water to quickly stop their cooking and cool them down. You could use pre-cooked shrimp OR use seared salmon instead!
