There are so many things that go into moving that you never really think about until they start falling, like dominos, after you get to your destination.
I need a new vet, I need a new dentist, I need a pediatrician, I need a gynocologist…should I look for a new hair salon or just grow out my color and cut it myself? Should I find an ophthalmologist or should I just let this prescription carry through for another year?
I feel like I’m in a constant state of google; a constant state of interviewing new people for these rolls in my life.
We found a new pediatrician…but I’m not crazy about her. So basically I have to use her until I find another one I do like, which is just awful because you have to fill out SO much paperwork every time you go to a new office.
I have a personal doctor appointment this week, which steeps me in anxiety because I hope I like her, but I also hope that I just feel like we are on the same page. I don’t know if I’m hoping for a bit of magic along the way but I have high expectations and it’s hard to feel like they’re met.

These Banana Bread Energy Bites will blow your mind. Not to put things lightly.
I grew up with banana bread having walnuts in it. Chocolate chips were an unexpected treat if they were ever there. So it’s no shocker that these Banana Bread Energy Bites have both.
Take a peek at the ingredient list though! They’re actually super healthy and SO simple. Really!
I found baby dried bananas at Trader Joe’s. You can use any dried bananas you love, but these were uber sweet and contained no added sugars. Win. They just look a little…unphotogenic to put it kindly.
The bananas are soaked in some hot water to soften, then blended up with walnuts and cashews and a touch of honey until a paste forms. Yes, I made these in my Vitamix! I left a few nutty pieces in there out of impatience, but I like that texture of a nut here and there. A pinch of salt and vanilla are blended in too.
Then you’re just tying up loose ends from there. I scoop it all into a bowl, stir in some coconut flour until it resembles cookie dough, throw in chocolate chips and chia seeds, roll roll roll…
You keep the balls in the fridge. They have a deliciously tender texture, which I just love. So does banana bread, so that’s appropriate.

Banana Bread Energy Bites
Recipe by Melissa @ Treats With a Twist
Makes 19-20 teaspoon sized bites
Ingredients:
¼ cup raw cashews
¼ cup raw walnuts
2 Tbs. honey
½ cup dried baby bananas
1 tsp. vanilla extract
pinch of kosher salt
¼ cup + 1 Tbs. coconut flour, plus extra
1 Tbs. chia seeds
3 Tbs. mini chocolate chips
Method:
First, soak your bananas in hot water for 15 minutes, or until very soft. Drain and place the bananas in the basin of your blender (or food processor).
With the nuts, bananas and honey in your high powered blender, blend until a thick paste is formed, stopping to press down the ingredients from the sides so everything gets blended.
Then add the vanilla and salt and pulse a few times until incorporated. Scoop the paste into a bowl.
Add the coconut flour to your paste, a couple tablespoons at a time, mixing until completely incorporated, the dough will be hard to stir and thick, like cookie dough. Add the chocolate chips and chia seeds and stir in until evenly incorporated.
Use a tablespoon or small cookie scoop to scoop out the dough, roll it in a ball between your palms, shake the ball in some extra coconut flour to coat (I toss the ball in a small bowl of coconut flour then shake the ball like dice in my hands to get off the excess).
Repeat until all of the balls are finished.
Refrigerate the balls in a covered container. Eat as you please! Enjoy!
Note:
Keep extra balls in the fridge for a week or in the freezer for a couple months.

I hear ya on the doctors…I agonize over that and wait way too long before changing. Usually when there is a problem and I need to deal with it and want someone I trust.
