These Rose Mocha Iced Lattes are my transition from light and frilly lavender summer lattes to deeper fall flavors. I love my lattes iced because it’s still so darn hot outside, but you can easily make them hot too. Either way, this at-home pick-me-up will be one you’ll want every afternoon.
Every so often you taste something that truly sticks with you. A couple years ago I had this crazy iced latte that was flavored with rose, mocha and a few other flavors too. Although I didn’t think it needed all the extra stuff, I couldn’t’ get the rose mocha part out of my brain. It was SO good!
Ever since, I’ve been always quick to order anything with a floral undertone.
Yes, I get a lot of soap-like results (I’m looking at you Rose Apple Avocado smoothie from that juice truck…). But when it’s good, its GOOD.
So in attempt to recreate what I wish I was sipping on for the last couple years, I’ve made Rose Mocha Syrup. And I seriously would pour this in EVERYTHING if I could. It’s thick, smells and tastes beautiful, and creates the most subtle, “adult” mocha ever. Like, hey I’m sipping on a mocha, but it’s ok because it’s ROSE. Yeah, that.
I promise you, it doesn’t taste like soap. Or smell like your grandmother’s closet. Both would be tragic.
Instead, it tastes like a mocha but also like you can smell roses on the breeze. Don’t hate me.
I ordered these rose petals off Amazon. They come in a seriously large bag, so you’ll be making syrup like a factory. But also, you can use them for tea, bath soaks, homemade bath products…or gift half the bag to another culinary curious amiga. Friends support other friends.
Let’s talk coffee REAL quick, mmkay? Use cold brew. Or pulled espresso that is cooled THEN iced. Don’t throw ice cubes in a cup of coffee and then use that. Gross. When you use cold brew, it is made to be consumed COLD and isn’t bitter, like old coffee is. You’re worth it. You can make cold brew yourself at home or grab a jug of it at the store.

Rose Mocha Iced Lattes

INGREDIENTS
Rose Mocha Syrup:
¼ cup coconut sugar
½ cup water
3 Tbs. unsweetened cocoa powder
2½ tsp. culinary-grade rose petals
You’ll also need:
Cold brew coffee or espresso shots
Milk of your choice (I love Califia Farms unsweetened vanilla almond milk or toasted coconut almond)
METHOD
Make the syrup:
In a saucepan, combine the syrup ingredients. Whisk over medium heat until a boil starts, then turn the heat down to maintain a slight simmer. Whisk until the syrup becomes thick and the sugar is completely dissolved (about 2-3 minutes). Take the pan off the heat and let it come to room temperature.
Pour the syrup through a mesh strainer and into a jar for the fridge.
Make a mocha: combine ¼ cup cold brew (or 2 shots of espresso) with ½ cup of your favorite milk and 1½ – 2 Tbs. of the Rose Mocha Syrup. Stir vigorously to combine (or shake in a closed jar) then add ice. Taste and adjust to your liking (if you like more milk or more syrup). Enjoy!
