In a collaboration with Sabra, I am so excited to share with you my go-to super simple and crazy delicious lunch lately: Hummus Toast with Quick Pickled Onions and spicy herb salt. This recipe just happens to be gluten free and vegetarian and blows avocado toast out of the water (and you know how much I love avo toast).

Lately I’ve felt even more frantic than normal. Planning composed meals just seems to be out of my realm of reach. I just can’t seem to pull it together…probably because I have two kids and I’m always anticipating cooking a big meal for dinner.
Toast for a meal seems within reach though.
You KNOW I’m a huge avocado toast fan. Dousing it with Trader Joe’s Everything Bagel Seasoning is my daily joy. BUT I think hummus toast is that ethereal protein-packed toasty sister that needs a chance in the spotlight.
SIDE NOTE: I still love making my own bread. When I can get a system going, I keep gluten-free sourdough ready to bake and on rotation in my kitchen. So, the loaf you see in these photos is truly gluten-free bread and happens to be homemade. You can 100% buy whichever bread you love most, but if you decide to make it, I highly recommend this cookbook.
Any good toast meal needs layers of flavor and texture. So here we have: toasty bread, nutty Pine Nut Hummus from Sabra, some crisp radishes, bright pickled onions and a spicy herb salt that pulls it all together. Oh and a sprinkle of green onions, because they go good on EVERYTHING. The result….
This toast tastes like that iconic Olive Garden salad! Not even joking. I couldn’t put my finger on it, but my husband said something to the effect of…”tastes like an Italian salad!”
And let’s just say, if it got my husband to voluntarily eat radishes without saying a word about them, you know it’s a winner.
The Quick Pickled Onions are something you’ll want to keep in the fridge for every single salad and meal. I love them with schwarma, stir fry, mezze platters, falafel, and TOAST. Duh. They get their hint of sweetness from a dose of honey, keeping them processed-sugar-free.
And the spicy herb salt is something you do NOT want to skip! A sprinkle of sea salt might do the trick, but the extra layer of flavors the herb salt adds, including that sneaking bit of heat afterwards, really makes this a toast that will have you coming back for more.
Ok, enough about the toast, let’s make some.
Hummus Toast with Quick Pickled Onions

INGREDIENTS
Slices of your favorite gluten-free bread
Hummus – Sabra pine nut hummus
Red radishes (one per toast)
Green onions (scallions)
For the Quick Pickled Onions:
1 red onion
½ cup vinegar (I used white)
¼ cup honey
½ tsp. kosher salt
5 black peppercorns
For the Spicy Herb Salt:
1 tsp. red chili flakes
2 tsp. kosher salt
¼ tsp. garlic powder
1 tsp. oregano
METHOD
Make your Quick Pickled Onions: thinly slice your onions and place in a large jar. In a saucepan, combine the vinegar, honey, salt and peppercorns along with 1 cup of water. Bring to a soft boil then turn down to a simmer and whisk for a couple minutes, until the honey and salt are dissolved. Turn off the heat and carefully pour the liquid over the onions until they are submerged. Add the lid and let the jar sit on the counter till it is cooled, then place in the fridge.
Make your Spicy Herb Salt: muddle the spices together with a mortar and pestle until evenly combined and sized. If you don’t have a mortar and pestle, you can place it all in a small jar, screw the lid on tight, and shake it vigorously.
Slice your bread and toast it up.
Slather each slice with hummus.
Slice your radishes (I use a mandoline) and layer those on. Then add some pickled onions and a sprinkle of sliced scallions. Finish with a big pinch of the Spicy Herb Salt.
