My Iced Peanut Butter Latte has become a summer staple. Bursting with a pure peanut butter flavor and a hint of vanilla, this is for all your peanut butter lovers out there. Plus, I’m including TWO ways to do it.
We’ve all had peanut butter CUP everything, right? Chocolate and peanut butter are best buds, it’s only natural. But when I had an iced peanut butter latte a couple years ago from a TINY coffee shop in Northwest Arkansas, I was hooked. Done.
What I loved about the peanut butter latte was it got it’s flavor from real pb. The barista used a cocktail shaker to vigorously shake the espresso and peanut butter together until they were one. Then the perfect amount of milk was added, some vanilla…all poured over ice. It was SO darn good.
So I don’t happen to live in NWA (and that coffee shop is closed now), I’ve been mixing up my own at home.
I had a quick meeting via Snapchat with my bestie to make sure I got the recipe right, since she happens to make it at home too. I’ve broken it down into TWO recipes. One has vanilla collagen powder, if you happen to use that. The other uses vanilla extract, if you want to keep it powder-free. BOTH are perfect!
YES you can totally use a cocktail shaker. But here’s what I do: blitz it in your blender. It truly gets ALL the peanut butter broken down and married with the espresso and milk. But also, I’ve totally thrown it all in a jar and shook it up like my life depended on it. It all works, just be aggressive.
Sweetness. I use liquid Stevia these days, but I’ve used powder. As long as your shaking it all well, either should be fine. Use the level of sweetness you like. I tend on the unsweetened side, so keep it low. You can always go up, not down. OR use pure maple syrup to sweeten. It’ll disappear well into the peanut butter and won’t distract from the taste.

INGREDIENTS
ONE
1/3 cup strong cold brew coffee OR 2 shots espresso
2/3 cup unsweetened vanilla almond milk (or milk of your choice)
1 heaping Tbs. creamy peanut butter (I use Smucker’s or Crazy Richards)
1 tsp. vanilla extract
2 tsp. maple syrup OR 4 drops liquid stevia (depending on your desired sweetness)
TWO
1/3 cup strong cold brew coffee OR 2 shots espresso (I use French Truck, local)
2/3 cup unsweetened vanilla almond milk (or milk of your choice)
1 heaping Tbs. creamy peanut butter (I use Smucker’s or Crazy Richards)
½ scoop Vital Proteins vanilla collagen creamer
4 drops liquid stevia OR 2 tsp. maple syrup
METHOD
For either method, combine all the ingredients in your blender or in a bottle with a tight lid. Blend for 10-15 seconds to completely incorporate, or shake hard until incorporated. Pour over a glass of ice. Adjust sweetness to liking, enjoy!
