I know it has been forever since I’ve shared a recipe. Between depression, running around with two kids, moving again and now a pandemic, it’s just never felt right. BUT every morning I make the same coffee drink, which I call a Power Collagen Latte, and I’m ready to share the easy recipe with you!
AND because I was asked for a Keto version too, I’m sharing the quick swaps to make it Keto-friendly. I double-checked with my friend Nora to make sure it was following Keto guidelines since I’m not a Keto gal.
I’ve been making my coffee this way every morning for YEARS. I’m talking, before I was pregnant with Easton. In the winter I’ll add cinnamon or turmeric to the blender too, but it’s been the same nonetheless.
Now that I’m not breastfeeding, I have a brand new appreciation for this drink. The collagen and extra fat from the coconut oil make it more filling than a traditional coffee drink. It holds me over till the kids are done stealing my breakfast and I can make another that’s just for me.

Power Collagen Latte
Recipes by Melissa @ Treats With a Twist
Makes 1 serving
My Traditional Version
INGREDIENTS
1 cup of strong freshly brewed coffee
2 Tbs – ¼ cup unsweetened oat or almond milk
1 scoop of collagen (Vital Proteins)
1 ½ tsp. coconut oil
optional: a couple drops of stevia or maple syrup
METHOD
Combine all ingredients in your blender and blend for 10-20 seconds. Your coffee must be HOT for this to blend properly. If you prefer more milk in your coffee naturally, you’ll want to go with ¼ cup of your milk instead of 2 Tbs.
Pour and enjoy.
Keto-Friendly Version
INGREDIENTS
1 cup strong freshly brewed coffee
2 Tbs – ¼ cup whole milk or cream
1 scoop collagen
2 tsp. coconut oil
optional: a couple drops of stevia
METHOD
Combine all ingredients in your blender and blend for 10-20 seconds. Your coffee must be HOT for this to blend properly. If you prefer more milk in your coffee naturally, you’ll want to go with ¼ cup of your milk instead of 2 Tbs.
Pour and enjoy.
