I realized recently that I haven't made banana bread in awhile (a month or two?) and that it was time to whip out the old favorite. Because it is based on fruit, it can be associated with summer or spring, but it's so warm and home-y and tastes like fall...but to make it taste even more like fall, I decided to morph it into Banana Pumpkin Bread! Tah-dahhhhhh!I found that recipes for pumpkin bread … [Read more...]
Happy Birthday Steve!

Pumpkin Ice Cream
The 2010 Pumpkin Consumption Extravaganza is officially underway. Now that I think of it, I should have that title term coined since it’s a personal event I celebrate every fall. It’s only the fourth day of October and not too many more days than that into autumn, but so far our pumpkin goods tally includes: pumpkin cream cheese tarte, pumpkin pancakes, pumpkin oatmeal almost every morning, (maybe … [Read more...]
Apple Tarte, sort of…
I’ve been getting recipes emailed to me from a website for a few years now that claims to “healthify” your favorite recipes into more calorie-conscious eats. Well, I look through them, print some, save some directly to my computer, and of course, cook none of them. I too claim to make recipes healthier and tend to bake things with as many substitutions as humanly possible. So, I decided to rifle … [Read more...]
Carrot Apple Nut Muffins
For round two of muffins (also known as "cleaning out the fridge"), I've decided to do a jumble of shredded carrots, shredded apples, pecans, and oats. These muffins turned out so moist and flavorful, without a lot of sugar or fat. I used a lot of substitutes, including Greek yogurt and apple sauce, and most of the flavor came from the freshly shredded ingredients. The ultimate sign of success in … [Read more...]
Sweet Potato Muffins
Time for the first taste of fall!Well I'm completely exhausted. In addition to moving (one small Civic car-load at a time), Razorback games (go hogs! We beat Georgia!), and exams (all As, all the way), I decided I need to get back into baking as soon as possible so it doesn't slip away from me. I wanted to start with something out of the ordinary.I found a recipe for sweet potato muffins on … [Read more...]
Woo Pig! Go Cupcakes!
Well, it's the first football game weekend and that means tailgating and...cupcakes!I was in charge of some major snacking for this tailgating extravaganza, so I dug through my cabinets and chose a simple recipe from what I had available. I adapted the vanilla cupcake recipe from the Magnolia Bakery by adding cinnamon. I then topped the cupcakes with a frosting from my own crazy mind: peanut … [Read more...]
R.I.P. I think…
I've been very busy, and thus neglectful, during the last couple months. I haven't been able to bake lately because I'm searching for a baking job (cross your fingers!), organizing everything I own, giving away a ton of stuff to charity, throwing away even more stuff, going to class, sorting through the box of Raisin Bran Crunch to find the crunch clusters (oh come on, you know you do it … [Read more...]
Brown Sugar Pound Cake
It actually hasn’t been very long since I baked last; it’s just been several failed baking experiments in between posts. I attempted some meringues but they never baked dry. I also made some mini pies which had a wonderful filling, but I slightly burned the crust (or as my dad would put it: I cooked them perfectly). The filling for my pie was a mixture of apple, strawberries, and blackberries … [Read more...]
Peach Cobbler & An Ode to Almond Joys
For the last opportunity to bake at my parents' house, I decided to make another grandma-inspired dessert, accompanied by an ice cream tribute to my favorite candy bar.I absolutely love cobbler and have really been wanting that slightly sweet, fruity, and comforting dessert for quite some time now. I chose to use the peaches packed in water, Splenda, and a milk-based biscuit topping (instead of … [Read more...]
